If you don’t have time to cook the chicken to perfection and need a quick fix, pan fried the breast or thigh and season it with some Mexican spices. Use a spice combination like this to add some Mexican flavor to your chicken quickly and easily:

  • Paprika
  • Powdered garlic
  • Powdered onion

You may use whatever cheese you like in this recipe, as you can in most others. However, we’re utilizing queso fresco. Queso Fresco has the advantage of not melting as fast as other cheeses. It’s possible to get a good crisp on it without it completely melting. These characteristics make it an excellent match for this meal, but a basic cheddar cheese will suffice. Preheat oven to 350°F and bake for 20 minutes. You may want to cook for a little longer, depending on how ripe your avocado is. If you have an avocado that is fully ripe, you may skip the baking step entirely by placing it in the broiler for 5 minutes. This will result in a less cooked through avocado with a hot and melty surface (which some people may like). Avocados that are at or slightly beyond their optimum maturity work well in this meal. The finished result will be less delicious if you use an avocado that hasn’t completely ripened yet.
